
Strawberry Spring Salad
This salad is perfect for spring gatherings, picnics, or as a light and healthy meal any day of the week. The combination of sweet strawberries, tender spinach, crunchy almonds, and tangy balsamic vinaigrette is sure to please everyone's palate.
Ingredients
- 6 cups fresh baby spinach leaves
- 1 pint fresh strawberries hulled and sliced
- 1/2 cup sliced almonds or walnuts toasted
- 1/4 cup crumbled feta cheese optional
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare the Salad: In a large salad bowl, combine the baby spinach leaves, sliced strawberries, toasted almonds or walnuts, and crumbled feta cheese (if using). Toss gently to mix everything together evenly.
- Make the Balsamic Vinaigrette: In a small bowl, whisk together the balsamic vinegar and honey until well combined. Gradually whisk in the olive oil until the dressing is smooth and emulsified. Season with salt and pepper to taste.
